Grilled Tomato with Panko Bread Crumbs and Cheese LOW CARB

Low carb  by  only  sprinkling with panko bread crumbs lightly on top or substituting Parmesan or Romano on top and adding more cheese

WHO DOESN’T LOVE A MODIFICATION WITH MORE CHEESE?!!!

Minutes to Cook: 4
Number of Servings: 3
Serving Size: 2 halves

Ingredients

        3 Large Tomatoes – sliced in half
        1/8 cup of Panko Bread Crumbs just a sprinkle
      1 tsp of minced garlic
              1/2 tbsp of parsley or Italian seasoning
             Parmesan and mozzeralls shredded mixed together to liking for low carb,

Directions

Heat grill to medium heat.

Spray an Aluminum foil pack or pan with cooking spray. Add,Sliced tomatoes and season with salt & pepper.

In a small bowl, mix the remaining ingredients  garlic, parsley and cheese). Sprinkle over tomatoes making a tiny mound. Top with bread crumbs OR Just more Parmesan/ Romano grated cheese

Turn grill down to low.

Place tomatoes on grill and cook until bread crumbs turn brown.

Be careful it happens fast!

Avocado Chocolate Mousse

Every time my friend Mollie comes to visit we end up concocting some recipe from scratch. last week we made “Eat like its the last night of our lives” seven layer dip and baked chicken cheesy yummy in your tummy dip. Mollie brought blue Chips and spicy blue chips and they were quite possibly the best  things we’ve made so far! If I can remember the ingredients I will post later.

Going off our previous success we decided to make an “5 ingredient Avocado Chocolate Mousse” How hard could it be? After all,  we considered ourselves Giada’s in the Kitchen after last week!

Start with 1/2 Avocado and 1-2 Tablespoons of unsweetened Cocoa Powder

Add Sweetner: I used Sweet Leaf Stevia because of low carb and Mollie used Organic Agave Nectar about 1 teaspoon.

Add 1 -2 teaspoons of peanut butter and a sprinkle of Salt.

Mix and mash until it looks like something from my daughter’s diaper.

We decided it’d be better with a food processor or mixer but, hey, its a first attempt.

Add Vanilla protein powder and light cream

Oh Emm Geee— It was horrible!!! I gagged literally. So I searched my cabinets for a low carb sweetener…

Then there it was BAM!!! Vanilla protein powder so I sprinkled a bit in and added a dash of light cream and some unsweetened coconut flakes and well it wasn’t Hagen-Daaz but it fixed my craving.

Or maybe it was the Skinny Fiber I had taken 30 minutes before either way I have half left in my fridge that I am going to try again after I eat my quiche and see if it’s any better.

Definitely,  will play with this again but next time with a better recipe perhaps there are somethings that should be left to Giada herself.
